Chocolate Cereal Bites with Peanut Butter

Delicious, easy and perfect for game night, these no-bake Chocolate Cereal Bites with Peanut Butter are sure to become a snacking staple.

Ingredients

  • cups Cascadian Farm™ Organic Multi Grain Squares Cereal

  • cup organic creamy peanut butter

  • cup organic honey

  • cup toasted sliced organic almonds

  • oz. semisweet organic chocolate chips

  • Organic cooking spray

Instructions

  1. Spray a mini muffin pan with cooking spray.

  2. Pour cereal into a large bowl.

  3. In a separate small, microwaveable bowl, heat peanut butter for 30-60 seconds. Stir in honey and heat for 30 more seconds. Pour half of the mixture over the cereal and gently fold together (trying to not break the cereal), then pour the rest of the peanut butter mixture and fold again until all the cereal pieces are coated.

  4. Sprinkle in half cup of almonds and fold in gently. Then sprinkle in another half cup of almonds and again fold in gently.

  5. Spoon out rounded tablespoon-sized portions into each of the mini muffin cups. (Should make 36 bites total.)

  6. Melt chocolate in the microwave starting at one minute then stir, heat again for one more minute and stir, then heat for another 30 seconds — it should be runny. Drizzle one full teaspoon onto each bite.

  7. Break up the remaining sliced almonds (¼ cup) just a bit and sprinkle on top of all the bites.

  8. Refrigerate bites for 30 minutes – 1 hour (or freeze for 30 minutes) or until the chocolate is solid.

  9. NOTE:
    • Be sure to purchase organic “no-stir” peanut butter, the kind that does not have oil on the top that needs to be stirred in. (It will not mix well with the honey and won’t be able to coat the cereal.)
    • If you can’t find toasted almonds, you can toast them yourself. Place almonds evenly on a parchment-lined baking sheet. Bake for 3-4 minutes on 350 degrees.
