Fritos Top N Go: Mexican Corn Nachos

Fritos make a festive base for a favorite Mexican dish that’s topped with grilled corn, cilantro, and Cotija cheese. ¡Ole!


  • bags Fritos (single-serve size)

  • cups grilled corn (off the cob)

  • cup Mexican crema

  • tsp. Ancho Chili powder

  • tsp. minced garlic

  • tsp. minced cilantro

  • tsp. lime juice

  • Crumbled Cotija Cheese (garnish)


  1. Preheat grill and cook corn until charred. Set aside to cool.

  2. Once cooled, carefully use a knife to cut the charred kernels off the cob. Add corn and all remaining ingredients into a mixing bowl. Mix together until well incorporated. Refrigerate if desired before filling Frito bags.

  3. To assemble tacos, add corn mixture on top of Fritos, and garnish with crumbled Cotija cheese.
