Game On!

Potato Chip Crusted Fish

Ready in 20 minutes or less, turn this classic into your family’s favorite game night go-to dinner!

  • lbs. White Fish (I used Cod)

  • tsp. Garlic Powder

  • tsp. Paprika

  • cup Buttermilk

  • cups Crushed Lay’s Baked Potato Chips

  • cup Bread Crumbs

  • cup Light Mayonnaise

  • Tbsp. Lemon Juice

  • clove Garlic crushed

  • tsp. Parsley chopped

  • Salt + Pepper to taste

  • Lemon Juice to taste

  1. Line a baking pan with foil and spray with nonstick spray.

  2. Preheat oven to 450° F.

  3. Cut fish into strips. Season with salt and pepper.

  4. Pour buttermilk in a shallow bowl. Add the garlic powder and paprika. Mix.

  5. Place the crushed chips and breadcrumbs in another bowl. Mix with a fork until combined.

  6. Place the fish into the buttermilk. Tap on the sides of the bowl to remove excess liquid and place the pieces in the crushed chips.

  7. Cover the pieces with the crushed chips and tap the sides of the bowl carefully to remove excess breading.

  8. Place the breaded fish on the sheet pan.

  9. Spray the tops with nonstick spray.

  10. Bake for 11-12 minutes or until the fish is cooked thoroughly and is crunchy.

  11. Remove from the oven, let it rest for 1-2 minutes and place on a platter. Squeeze lemon juice on top (optional).

  12. To prepare the Lemon Garlic Mayonnaise, mix 1 cup light mayonnaise, 1 tablespoon lemon juice, 1 clove garlic crushed, 1 teaspoon parsley chopped, and salt + pepper to taste together in a bowl. Check for seasoning and add more if needed.

  13. Enjoy!
